Just like savoury winter stews, vegies that develop over many weeks have a depth of flavour thatcanbelacking in some of their fast-growing summer cousins. Root vegies are classic examples: carrots, turnips, parsnips and beets all seem to taste better in winter. Grow them in well-dug soil that forms a soft bed for the expanding roots. Carrots, particularly, are notorious for developing multiple skinny legs if the soil is hard, stony or studded with lumps of manure or fertiliser. And don't give root vegetables too much nitrogen-rich plant food, or you'll end up with lots of green tops and very little underground action. Peas grow well in the winter garden. If you've never tasted a freshly-shelled pea, you have a treat in store. Snow peas are even more versatile as they're tender enough to be tossed into winter salads or stir fries. The slightly plumper sugarsnappeascan also be eaten, pod and all. Snow peas are climbers, so grow them up a sunny fence. Remember to add a little bit of lime to the soil before planting any type of peas. Leafy greens such as lettuce, cabbage and spinach also grow well in the cooler months. Keep them moving along with plenty of liquid feeding (like Thrive Soluble) and begin harvesting leaves as soon as they're large enough to be useable. Details: www.yates.com.au Restoration of...
