It is synonymous in Australia with great tastes, celebrations and all-round good times. That humble barbie has become a part of Aussie culture, from simple sausages and steaks to the best modern Australian cuisine. With barbecues part of every Australian living and celebration, it's important to know a few basic points concerning buying and maintenance. To maintain barbecues, even during winter, we must apply some basic methods. Rod O'Brien, of Joe's Barbecues and Heating, points out the many dangers of not looking after your barbie. ''I am amazed how many of our customers see us after they've had food poisoning, or a gas leak, a snapped gas jet, or a fat fire,'' Mr O'Brien said. All this can be easily avoided by regular barbecue care. Here are some easy steps that can be carried out at home for less than $20: Use a flat scraper and a wire brush to remove the build-up of baked barbecued food on the cooking plate and grill. Use soapy water and rinse off thoroughly; Scrape and brush off the barbecued deposits from the barbecue frame and roasting hood. Use a non- caustic barbecue cleaner (available at barbecue specialist retailers for about $10-$12 for a 400g can) for this job. Spray on and leave for 2-3 hours, then rinse and wipe off. Leave in the open to dry off thoroughly before spraying a coating of oil on the plates and grills. This will form a protective layer and will burn off during reheating prior to your next use; Replace lava rocks or volcanic rock and thoroughly brush or scrape out heat deflectors and vaporisers. If Weber-styled Inverted-V Shaped, then soak in a bucket of soapy water then wipe off; Clean out your drip tray and replace with proper barbecue fat absorber. Don't use kitty litter. Before placing fat absorber in your drip tray, line with aluminium-foil shiny side down. Fat absorber should be spread evenly across the drip tray about 1-2cm deep; Check your gas cylinder for dents, leaks and excessive rusting. Gas cylinders should be within 10 years from date on the collar; Clean the exterior of your barbecue and cabinet trolleys with warm soapy water or a mixture of a mild detergent. Be wary of barbecues which are constructed using a painted finish, as they may tend to have their exterior coatings rub off; Check the barbecue control knobs to ensure they are free from obstruction. Spray a can of WD40, which will loosen the friction if needed. Test your gas hose connection to ensure there are no leaks. Listen for any hissing. You can even use soapy water sprayed along the gas lines, which will bubble if leaks are present. Re-oil the plates and grills; and Preheat your barbecue for about 5-10 minutes on high before your first use of the season. Avoid leaving this too long, though, as you will buckle the plates.
