Soon enough the turkey is toast, your Christmas pud has collapsed and uncle Phil has had an allergic reaction to your prawn cocktail. It's that time of year again -- when tears and tantrums reign supreme in the kitchen. Christmas catering doesn't have to be a nightmare -- all it takes is some planning, test-runs, helping hands and a refreshing beverage or two at the end of the day. Whether it's your first or umpteenth time hosting Christmas lunch it's important to realise that things can -- and often do -- go wrong. Once you can accept that things don't always run smoothly when catering for Christmas you'll be more relaxed and able to deal with any problems. We've heard all the hosting horror stories and have compiled a list of the top five do's and don'ts when hosting Christmas for family and friends. Do plan ahead. Write up a menu with a list of ingredients, but keep things simple. Fresh seafood, roast or barbecued meats with sides and some desserts should do the trick. Do ask for help. There's nothing wrong with hosting a BYO plate Christmas. If you're overwhelmed ask everyone to bring a dish or two to lighten your load. Do things early. Set up your home a few days in advance and prepare what food you can before Christmas Day. Do keep clean. Be sure to refrigerate properly, wash all fresh fruit and vegetables, check use-by dates and never place raw and cooked meat together. Food poisoning is not a festive gift to give to a guest. Do stay calm. Whatever happens, don't let the heat, exhaustion or stress get to you. If it does, take a breather and ask someone to step in while you put your feet up and gather your thoughts. Don't be a kitchen control freak. Food and family go hand-in-hand so if someone offers to prepare meals, wash- up or help out -- take them up on their offer. Don't overdo it. Simplicity is the key to Christmas catering -- fast, simple food is always a winner because no one likes waiting around for haute cuisine when they would happily devour a roast chook. Don't chug back the drinks. Sure a beer or wine takes the edge off things but while chopping, stirring and baking, do things in moderation. Don't assume anything. Ask family and friends about their food likes and dislikes, allergies and intolerances. There's no point in serving seafood platters if half the family has gone off prawns.
