This is one day of the year that he can kick back and expect you to do all the work. Electrolux cooking ambassador and chef Peter Gilmore of Quay Restaurant provides his tips on how to serve a restaurant-quality steak straight from the barbecue. Always pre-heat your barbecue grill. Get it very hot with the hood down for 10 minutes, then open the hood and turn burners to medium before sealing the meat. Before barbecuing beef, lightly brush with olive oil and season well with flaked sea salt and freshly ground black pepper. For barbecuing, select a cut that is well marbled, such as rib eye or sirloin as opposed to a lean cut such as fillet. For individual steaks, always seal the meat on a hot grill. Once it's well coloured on one side turn over to colour the other side. Turn grill to very low to finish cooking. Before serving steak allow the meat to rest, either on the warming rack with the barbecue turned off or on a platter that's lightly covered with a tea towel. Allow beef to rest for at least 10 minutes, but keep the meat warm. This allows all the juices to run back into the steak. Brush beef with heavily reduced meat juices and serve with a flavoured butter such as wasabi. You can also accompany your meat with good mustard or horseradish cream. Executive chef of Quay and Electrolux cooking ambassador Peter Gilmore says steaming is the best form of cooking and it is becoming increasingly popular in executive kitchens as well home kitchens. Steam cooking requires no fat or oil, retains the food's natural nutrients and juices and is a fast and easy way to cook. Gilmore and Electrolux have created a guide to simple and healthy steam cooking using a variety of cooking appliances. Cooktop Cooktop steaming is a popular method for a number of international cuisines, particularly Japanese. All you need is a pan with a well- fitting lid and a rack to support the food over the liquid in the pan. Bamboo steamers are also a great item to have in your kitchen. Microwave By using your microwave along with a microwave steaming dish, you will be able to cook all types of delicious food. Most steaming dishes will come with a tray with slots or holes resting on top of a dish of water. Barbecues Placing a pan of water on the grill and closing the hood during cooking will work in a similar manner to that of a steam oven.
