ELECTROLUX cooking am- bassador, Peter Gilmore of Quay Restaurant provides tips on how to cook a restaurant- quality steak on the barbecue: Always pre-heat the barbe- cue grill with the hood down for at least 10 minutes. Open the hood and turn the burners to medium. Brush the meat with olive oil and season with salt and freshly ground black pepper. Always seal steaks on a hot grill. Once the meat is well coloured on one side, turn it over. Turn your grill to very low and finish cooking. Allow beef to rest on for at least 10 minutes. With a larger barbecue you can cook a larger cut of beef. Seal the meat well and place on a rack in a roasting pan filled with a few centimetres of water. Cook with lid closed until ready and rest before carving.
